This tea\nremained the privilege of the nobility for a long time, before it\ngradually became popularised, and today it is the central pillar of\nthe Japanese Zen philosophy and aesthetic, through the\nCha No Yu ceremony.\n\n\u003ca href=\"https:\/\/www.palaisdesthes.com\/en\/understanding\/matcha\/\"\u003e\nMatcha\u003c\/a\u003eis made using Tencha leaves which, instead of being\nshaped into needles like Gyokuro, are ground to a fine powder that\nhas a beautiful jade colour.\n\nFor the Cha No Yu, two types of Matcha are used:\n\u003cul\u003e\n \t\u003cli\u003eUsucha, the most widely used, made from leaves plucked from\nyoung tea plants, which produces a light tea.\u003c\/li\u003e\n \t\u003cli\u003eKoicha, made from leaves plucked from tea plants that are at\nleast 30 years old, which produces a strong tea.\u003c\/li\u003e\n\u003c\/ul\u003e\nVery delicate and refined, this top quality matcha has a\nvelvety, mellow texture and a sweet, smooth fragrance.\n\nPlucked from tea plants that are more than 30 years old,\nit is processed specially for making Koicha (the thick tea drunk\nduring the tea ceremony). The liquor has a very pleasant and\nintense aroma.\n\nWhat is Koicha?\n\nKoicha is prepared and consumed almost exclusively during the\nJapanese tea ceremony, the Cha No Yu. The ceremony starts with a\nlight dish – Kaiseki – then after a short pause,\ncontinues with Goza Iri, the central part of the ceremony, during\nwhich a thick tea (Koicha) is served first, followed by a light tea\n(Usucha).\n\nThe difference between Koicha and Usucha:\n\u003cul\u003e\n \t\u003cli\u003eKoicha is much thicker than Usucha (light tea), and has a\nconsistency similar to runny honey.\u003c\/li\u003e\n \t\u003cli\u003eIt is smoother and sweeter than Usucha.\u003c\/li\u003e\n \t\u003cli\u003eKoicha is usually made using a more expensive Matcha (of a\ngrade designated for tea ceremonies) than the one used to make\nUsucha.\u003c\/li\u003e\n \t\u003cli\u003eTwo preparation methods are used, which differ in terms of the\namount of tea, the quantity of water, and the whisking (see\nbelow).\u003c\/li\u003e\n\u003c\/ul\u003e\nCompared with Seijo no Shiro, which is ideal for making Usucha,\nMeiju is a thicker, more concentrated Matcha.
