This Pu Erh Sheng has a subtle acidic flavour, developing good
vegetal, mineral notes to start, followed by fruit notes that
linger in the mouth.

This is an excellent compressed Pu Erh Sheng in cake form, made
from hundred-year-old tea plants in Yunnan.

Also known as “raw” or “green” Pu Erh, this is one of the
oldest types of tea consumed in China, and dates back to a time
when, for practical reasons of transport and storage, tea leaves
were compressed and carried on horseback. On contact with the
animals, the tea cakes fermented slightly with the heat and
humidity, and acquired their unique aroma.

There are several stages in the production process:

  • First, the dry leaves are steamed, to soften them. The required
    quantity of leaves is then placed in a metal recipient over a jet
    of steam at 170°C for several minutes.
  • Once the leaves have cooled, they are placed in a cotton bag,
    then pressed and steamed between hot plates, which compresses them
    into a cake form.
  • Once the cake has cooled, it is removed from the bag and left
    to dry in a warm, wellventilated room for 24 hours, before being
    packed.
  • The cakes are stored for ageing on the resellers’
    premises.
